These Chilaquiles come together fast but still feel really fresh and flavorful, using a simple tomatillo sauce that gets blended and poured straight over the chips. The combo of Vista Hermosa Totopos and Loisa Sofrito makes it super easy to build big flavor in one pan, without overthinking it. Everything softens just enough while still keeping texture, and once you top it with a fried egg and fresh toppings, it’s the kind of breakfast that feels comforting but still bright.

Why boil and blend the sauce

Boiling the tomatillos and jalapeños takes away that raw bite and brings out a softer, brighter flavor. Once blended, the sauce is smooth and light, so it coats the chips evenly without feeling heavy.

Pouring the sauce right over the chips

Instead of cooking the sauce first, you pour it directly over the Vista Hermosa Totopos in the pan. It saves time and gives you that classic chilaquiles texture where some chips stay a little crisp and others soak up the sauce.

The difference between migas and chilaquiles
