Pantry Project: Roasted Garbanzo & Veggie Medley

As we continue our time at home, so continues our Pantry Project! Here's another savory and creative receta you can hopefully bring together with ingredients you already have.

~ Roasted Garbanzo & Veggie Medley ~

During this time of stillness and little physical activity, you want to make sure you are staying healthy...well in general we should always strive to eat healthy and well balanced meals, right? Usually this is my go-to after a busy day since it is truly a 30-minute meal. Now, it’s my go-to so I can hurry back to my Netflix binge-fest without interruption! On this particular day, I used garbanzos, broccoli and sweet potato because it was what I had available at home, but you can use ANY combination of veggies, beans, and potatoes you’d like. I typically cook with fresh produce, but right now I highly recommend stocking up on frozen or canned options that will last you as long as social distancing!

Ingredients (2-3 Servings)

  • 1 can of garbanzos/chickpeas, rinsed
  • 1 sweet potato
  • ½ bag of frozen broccoli (or half a head of fresh broccoli)
  • ¼ cup grapeseed oil
  • 1 teaspoon Loisa Adobo
  • 1 teaspoon Loisa Sazon
  • 1 teaspoon paprika
  • 1 teaspoon chili powder

Instructions

  1. Preheat oven to 350 F and line a baking sheet with parchment paper. Spread garbanzos, sweet potato and broccoli evenly on the tray. Drizzle the oil and seasoning over the veggies evenly and mix around so all pieces and sides are coated.
  2. Bake for 30 minutes or until the potato pieces are cooked through, garbanzos are crispy and broccoli has slightly burnt tips. While this is in the oven during the last 3 minutes or so, place your Loisa Brown Rice & Quinoa packet in the microwave (follow heating instructions on back of the pouch). This is a perfect addition to a bean and veggie medley and will be ready in only 90 seconds. Combine the two in a plate or bowl and enjoy this deliciously wholesome meal!
