Yuca Con Mojo de Cebolla Verde

Fresh for spring, or really, anything - the mojo is the star in Cristina's latest creation, especially with the brightness from those scallions.

Growing up, yuca con mojo was a staple at our table. I remember my mother and abuelas crushing the garlic with the wooden mortar and pestle, slicing the onions, and all the aromas of the kitchen. Scallion, or green onion, has its unique flavor and it really shines in this simple mojo rendition. You can jazz it up or leave it simple, either way it’s delicious!
